Carbonara might start with the word “carb” and the traditional version of this popular Italian pasta dish is indeed full of carbs. However, you can still enjoy the deliciousness of carbonara but without the carbs thanks to these zucchini noodle carbonara recipes.
I love the different twists on traditional Carbonara featured in some of these recipes. Traditional carbonara calls for letting the eggs cook slightly in the hot pasta. However, since zucchini noodles aren’t cooked to such a high temperature, many of these recipes call for scrambling the eggs separately and then adding to the dish. If you don’t mind your eggs on the uncooked side, you could toss them into the noodles the traditional way but from a food safety perspective we don’t recommend it. Another trick that one of the recipes below uses is to put a fried egg with a runny yolk on top of the dish instead of mixing the egg in as a sauce.
